How to Plan Healthy Weekday Dinners, Without Using a Recipe

Confession: I’ve spent the last few months in a complete drought in the kitchen. As in, zero desire to prepare dinnerway too many takeaways, and if you’ve noticed the lack of new recipes on the site this fall… that’s why. But fortunately, my love for all things culinary It’s baaaack, baby, and I couldn’t be more excited to cook and create in the kitchen this year.

I’m not sure when that changed, but suddenly I’m thinking about new recipes and my brain is firing on all cylinders again. I’m full of new meal ideas that I want to cook with winter products that I won’t be able to do them all before spring. (I have a whole theory about how creative hibernation actually leads to these bursts of inspiration, but I’ll save that for another article.)

All that to say, I’ve been cooking up a storm this month and can’t wait to share some new recipes with you. And whether you’re feeling inspired in the kitchen or not, I have a feeling many of you started 2026 with the intention of cooking. more recipes at home. There is no doubt that they are generally 10 times healthier and more affordable than restaurant food. So today I’m sharing how I plan healthy meals during the week which infinitely adapt to your family’s dietary preferences.

Here are the four meal designs I’m cooking on repeat at the moment. They’re simple enough to throw together on a busy weeknight, but interesting enough that I’m actually excited cook again. And the best? You can change them depending on what’s in your fridge.
