A lively tequila sour shaken up with an injection of tamarind and star anise

Rich tamarind chutney gives this vibrant tequila sour a sweet-sour depth that pairs brilliantly with crisp apple juice.

45ml blanco tequila – we use Olmeca Altos Plata 25ml apple juice 25ml fresh lime juice 20ml sugar syrup ½ tsp tamarind chutney – any decent brand will do 1 egg white , or 3 drops cocktail foamer 1 star anise, to garnish

Put everything bar the star anise in a shaker and shake vigorously without ice to set the egg white and build a smooth foam. Add a good handful of ice, shake again until well chilled, then strain into a tumbler filled with fresh ice. Garnish with a star anise.

Swoon! London City Ballet are positively glowing in a night of dreams – and ghosts from dance history

Sadler’s Wells, London Alina Cojocaru astonishes in John Neumeier’s Ghost Light, an ethereal meditation on time, while Glen Tetley’s Firebird has much to cherish A ghost light is the name for a single lamp left on stage when a theatre is dark, and one glows throughout John Neumeier’s ballet Ghost Light. Also never not glowing is Alina Cojocaru, superlative ballerina and guest dancer with London City Ballet, who has a longtime working relationship with Neumeier and his Hamburg Ballet – with whom this work was originally created in 2020.
