
For me, the official start of summer is always marked by my first taste of the perfect fruit of the season. That first bite of a super sweet and floral watermelon, the first flavorful heirloom tomato and of course, a perfectly juicy peach. Summer is about embracing and celebrating the flavor of produce exactly as it is, without adding frills just for the sake of it. My approach to desserts takes a similar approach, finding ways to celebrate the flavors of the produce with very little extra. And since we’ve already experienced quite a heatwave, I’m a fan of sweet treats that don’t require turning on the oven. Enter, shaved frozen peaches with cream.
I’m a big fan of shaved frozen fruit trendand I enjoyed trying so many varieties during the season. Shaved watermelon with just a pinch of salt and chili, shaved honeydew with a drizzle of honey, and these shaved peaches with vanilla cardamom cream may be my new obsession. Think of all the joy of an effortless peach cobbler.

Here’s What You’ll Need for Frozen Shaved Peaches and Cream
The ingredient list here is simple and short, so use it as a starting point and substitute with your own additions.
- Peaches. Choose the variety you like during the season.
- Thick whipped cream. The base of our dessert.
- Cardamom. Cool soil is the only way.
- Vanilla pod powder. Or vanilla extract if you prefer.
- Salt. Make sure to use a generous pinch here.
- Powdered sugar. Just a little to bring it all together.
- Cookies. Consider shortbread, almond cookies, biscotti, or whatever version you prefer.

How to prepare this frozen dessert
This is obviously a simple dessert, but a few strategies will achieve the best results:
- Freeze your fruit overnight. You want to make sure your fruit is completely frozen to get those light, fluffy shavings.
- Do not over-whip the cream. I like to keep the whipped cream at a texture almost similar to slightly melted ice cream. If the peaks are a little too firm, simply add a little extra cream to the bowl and stir in to soften them.
- Fresh fruit brings it all together. Yes, we use frozen peaches, but adding fresh peaches adds extra sweetness and texture that also pairs wonderfully with the frozen shavings.
- Use whatever crunchy toppings you prefer. While I like crushed cookies to add a crunchy texture, you can also use any chopped nuts you have, add chopped white chocolate or granola if you like.
- Add a swirl of yogurt. If you’re going for more of a breakfast vibe, add a big dollop of yogurt to the cream or replace it entirely with yogurt as a base.

These shaved peaches are ideal for serving a crowd. Not only can you make a big batch of cream in advance and let people help themselves, if you freeze just enough peaches for everyone, they can also have fun grating their own peaches over their bowl and adding their own toppings.

Shaved Peaches and Cream

Description
An easy, no-bake summer dessert celebrating seasonal peaches.
Ingredients
- 1 cup thick whipped cream
- 1/4 cup Powdered sugar
- 1/2 teaspoon freshly ground cardamom
- 1/2 teaspoon vanilla bean powder or vanilla extract
- 1/2 teaspoon salt
- 3 – 4 peaches, frozen
- 1 peach, fresh
- for garnish: crumbled biscuits or crushed nuts
Instructions
- Freeze the peaches overnight.
- Prepare the cream. Add cream, sugar, cardamom, vanilla and salt to a stand mixer and whip until soft peaks. Taste and adjust flavor if necessary.
- To serve, add a scoop of cream to a bowl. Using a microplane, grate the frozen peaches over the cream. Garnish with fresh peach slices and crumbled biscuits. Appreciate!
