When it comes to the art of attracting discerning winter sports enthusiasts , The Chabichou Hotel & Spa in the heart of the glamorous ski resort of Courchevel 1850 in France is an experienced hand: it has been a particularly attractive mountainside retreat for decades.

The property was purchased in 1963 by husband and wife team Michel and Maryse Rochedy when it was a traditional nine-bedroom Savoyard chalet.

Maryse took care of the accommodation, Michel cooked the restaurant. And what cuisine.

A first in Courchevel, the restaurant Le Chabichou obtained a Michelin star in 1979, then a second in 1984, which earned Michel the nickname "Le Bocuse des Alpes", after legendary Lyon chef Paul Bocuse (we'll come back to the hotel's incredible restaurant later).
