In the midst of an oversupply of avocados, how can we find ways to eat more? here are a few tips

Ditch the butter for avocados or turn them into ice cream: Avocado lovers are getting the most out of this popular fruit while it's cheap.

Growers are producing an average of 22 avocados per Australian this year and oversupply has led to rock bottom prices on supermarket shelves.

For Queensland celebrity chef Matt Golinski, there's no better way to start the day.

"There's no day when I wouldn't wake up and just make a piece of toast and mash an avocado on it and go for it," he says.

"To start the day is is one of my favorite things."

Children's avocado producer Lucia Philip suggested one very simple way to support the industry - ditch butter for avocado in the kitchen .

"You can actually just substitute avocado for butter in any of these recipes, in any cake recipe," Ms. Philip says.

"Just replace your butter or oil with avocado."

Mr. Golinski agreed that now was a great time to get creative in the kitchen and minimize waste.

"If you were going to make avocado ice cream and you had it later, that's a good way to use them," he says.

"Actually, I grew up on a do farm avocado and mom used to do some avocado ice cream.

"As a child, this seems like a pretty weird thing to do, but in reality, you're just enjoying the fact that it's a beautifully fatty fruit.

"It's a really good healthy fat and a monounsaturated fat, so it's really good for you."

"Get one or two for today and a few others that don't are not quite ripe that you can have later in the week," Avocados says Australia's chief executive, John Tyas.

"Leave them on the bench until 'until they're ripe and you'll have your own little supply chain at home."
