Cocktail of the week: We've already met from Aquavit – recipe | The right blender

A refreshing and floral cocktail perfect for the warmer months ahead.

We've met before

Serves 1

3-4 large chunks of cucumber, crushed and chopped, plus 3-4 additional slices to garnish 25ml aquavit - I use Akevitt Blank 50ml oak aged pink gin - I love Salcombe Gin20ml fresh lemon juice 20ml elderflower cordial – I love BottlegreenLight tonic, to top it off – I love FeverTree

Place the crushed cucumber, aquavit, lemon gin juice and cordial in a shaker, add plenty of ice, shake to combine, then strain into a wine glass filled with fresh ice. Fill the glass with tonic, garnish with three or four slices of cucumber and serve.
