With lettuce prices skyrocketing, the humble cabbage has recently garnered attention.

This easy purple cabbage slaw is the perfect accompaniment to Hetty McKinnon's fish tacos.

Served alongside spiced fish and an avocado yoghurt sauce, it completes a fun meal that's packed with a range of complementary flavours.

McKinnon also recommends adding some sauce into the mix – the vinegary zing pairs well with the other flavours in the dish.

This comforting, warm dish can be served as either a side or a main.

Bonus: the roasted cabbage is low-maintenance cooking – you can relax and let the oven do most of the work here.

Served on a bed of shallots, garlic and thyme, and topped off with sour cream and gratings of sharp cheese, it's sure to be a winter hit.

Vegetarian okonomiyaki
Hetty McKinnon loves using a variety of vegetables to make okonomiyaki.(ABC Everyday: Hetty McKinnon)

Okonomiyaki is a classic Japanese pancake, traditionally made with flour, cabbage and eggs.

But it's also a versatile dish — great if you're looking to use up some leftover veggies, including (but not limited to) brussels sprouts, leeks, potatoes, sweet potatoes and shiitake mushrooms.

The carrot in McKinnon's recipe adds complexity to the texture, and also brings out more sweetness from the cabbage.
