This trick, like many kitchen origin stories, came about out of necessity. A friend and I were baking a Funfetti cake for a birthday party and realized we only had two eggs instead of the required three. Without having time to run to the store and the gall that a glass of wine will give you, we thought, what's the worst that could happen? We left out the egg, and with the addition of my friend's heavy measure of oil, we baked a Bundt cake. And the most tender, finely crumbled Funfetti cake the world has ever known came out of the pan that day.
