Will PriestleyThere is a particular term called specialty coffee, which refers to coffees that score 80 or more points out of 100. So there is a standardized coffee rating system. Now, a coffee that scores 80 points or more is considered specialty, and it's usually somewhere in between, it's usually three times or more than the cost of regular grade coffee. We therefore strictly use specialty coffee for ethical reasons. And really, when you compare that after all, compared to commodity coffee, the cost of the coffee that we use is a much higher percentage of the cost than, say, the big chains, the bakery chains or the restaurant chains fast, who simply buy the lowest price. quality and defamation of a marketing campaign to boot.

Lucy BreadenThese chains we're talking about, however, can charge the same price as you for a cup of coffee, even if they buy cheaper coffee. Is it frustrating?

Will PriestleyYes, yes. It's infuriating, actually. I heard a statistic, I just keep repeating it, but I'm pretty sure it's true, that coffee is the only product in the world where quality doesn't dictate price. So I know McDonald's charges the same prices as us. However, the coffee they buy is of significantly lower quality. They also have fully automated machines. There is no love, just press buttons and brown liquid comes out. Yet we can offer coffees that are basically the highest quality you can buy and people won't care if you have to pay 50 cents more for it.

Will you pay $10 for a small flat white? This appears to be the going rate in some parts of Switzerland, but many Australians still think $4.50 is too expensive for their daily drink.
