Whimsical Campers: Recipes for Small Kitchens

By living in a van or a house without electricity, you learn to navigate, adapt and do things differently. Cooking and preparing food can take a little longer, but it's amazing how quickly you start to find pleasure in preparing meals a little slower using your hands rather than appliances. /p>

To get started on your small kitchen, here's an equipment list of what I use in mine almost every day - and three recipes to make.

Heavy-bottom pan: For all meals that don't require a lot of sauce cooking: eggs, French toast, fish, grilled meat and even pancakes.

Cast Iron Pot: For boiling pasta and rice, making cakes, cooking over the fire, boiling water, making curries and soups, or as a second pan if needed.

A sharp knife (or two): I have a simple rock to keep my knives sharp, but you can get plenty of handy gadgets that do the same job.

Utensils: My favorite 95% of the time is a wooden spoon for cooking. I also use a lot of tongs, and I have a little egg flip that I find perfect for scrambled eggs.

Colander or colander: ideal for rinsing grains and legumes and for making cheese, draining pasta or rinsing salad greens and herbs.

Cutting boards: We carry two, one for meat and one for everything else.

Bowls and Plates: While that's a given, I'd like to point out that we don't use anything specific to "camping." Our bowls, plates, mugs and serving platters are all things we could use in our home.

Measuring cups and spoons: Having a full set of measuring cups and spoons will take up too much space, so only have measurements for one cup, table...
